- Soy sauce
- Honey
- Lime juice
- Garlic
- Ginger
- Oil
- Sriracha
- Salt + white pepper
- Cilantro
How to marinate chicken thighs
Step 1: Whisk all of the marinade ingredients together in a small bowl.
Step 2: Pour ¾ cup of the marinade into a sealed ziploc bag or container. Add the chicken thighs and leave them to marinate in the fridge for 3 to 6 hours, or over night.
How to grill chicken thighs
Step 1: Now, add the marinated chicken thighs onto a hot grill and grill until the chicken is cooked through, flipping once, also grill any of your favorite veggies like zucchini, bell peppers and broccoli.
Step 2: While the chicken is cooking, make the slurry by combining the reserved marinade with cornstarch. Microwave from 30 seconds to one minute, then brush it over the grilled chicken.
Step 3: Finally, serve the grilled chicken with more marinade if you’d like and chopped cilantro and grilled veggies. Enjoy!

- 2-3 lb chicken thighs
Marinade Ingredients
- 3 tablespoons soy sauce
- 3 tablespoons lemon juice or lime juice
- 5 tablespoons honey
- 5 cloves garlic minced or grated
- 1 tablespoon fresh ginger finely chopped
- 2 tablespoons olive oil or oil of your choice
- 1-2 tablespoons Sriracha sauce I use 1 tablespoon
- 1 teaspoon sea salt
- ¼ teaspoon white pepper
- 2 tablespoons cilantro
For Glaze
- ½ teaspoon cornstarch
Instructions
Marinade
- Whisk all marinade ingredients together in a small bowl. Pour half the marinade (about ¾ cup) into a sealed zipper bag or container and add chicken thighs. Marinate for 3-6 hours in the fridge or over the night.
Grilling
- Grease the grill with oil, and preheat to high heat. Add chicken thighs and grill for 8-10 minutes, flipping once, or until thermometer reads 160F. Brush with glaze over the chicken and garnish with chopped cilantro. Serve with grilled veggies.
Glaze
- To make glaze, mix ½ teaspoon cornstarch into reserved ¼ cup marinade and microwave for 30 seconds to 1 minute to make a glaze-like consistency. Brush over grilled chicken.

Tried it last night. Don't have Sriracha sauce and cilantro but still came out really GOOD. My husband said it was the best he ever had with chicken. I baked it too not grill. Next time will try with the sauce and cilantro.
