What is Huckleberry Lemonade?
To answer this, you’re going to need an answer to what is huckleberry to begin with? Well, huckleberries are little berries that look similar to blueberries. Their seeds are bigger than the minuscule seeds you’d find in blueberries, therefore when you bite into them you get a bit more texture (and fiber!). Huckleberries also have a bit more tartness to them than blueberries do.
These little gems can be used the same way most berries are used. In jams, sauces, syrups, baked goods, juice, etc.
Where can I Forage Huckleberries?
If you’re lucky enough to live near forests, particularly in the Western States, you may find some while on your next hike. Don’t count on it, though, they’re hard to find!

- Lemon juice - I recommend using freshly squeezed lemon juice from whole lemons. The flavor is much better than if you were to use lemon juice from a bottle.
How to Make Huckleberry Lemonade
Step 1: In a blender, add huckleberries and water to blend until smooth. Strain the purée through a fine mesh sieve into a large bowl, just to remove the bitter seeds.
Step 2: Make the simple sugar in a small bowl. Combine the sugar and hot water, and stir until the sugar completely dissolves.
Step 3: Squeeze the lemon juice through a fine mesh sieve into a large bowl with huckleberry. Stir in the sugar syrup and mix well.
Step 4: Add 4 cups of cold water, stir. Taste a little and adjust the sweetness if needed. If it’s too sweet, add a bit more water. If needed add more sugar. Pour lemonade into a pitcher using a canning funnel.

- 7 cup water 2 cups of boiling water + 5 cups cold water
