Why You’ll Love This Recipe
- It’s basically foolproof! The air fryer does the work; you just have to flip it.
- So much flavor comes from the juicy steak and the simple seasoning I use.
- Wrapping it in bacon gives it extra flavor.
- It’s super easy to make and yet looks so elegant!
- You can serve it for a nice Sunday supper, a small dinner party, or any special occasion.
Tips for Beef Tenderloin in Air Fryer
- Don’t skip preheating the air fryer. It’s similar to the reason you need to preheat a skillet. The initial heat gives it a nice sear, which results in a beautiful crust. It also helps cook thicker cuts of meat evenly.
- Thick-cut bacon has less chance of cooking too quickly, becoming crumbly, or even burning.
- Rest the meat once it is done. This allows the juices to settle and redistribute throughout the meat. If you cut it too early, the juices will run out, leaving the steak dry.
- You can flavor your butter with the herbs if you’d like. Make a compound butter and place some on top to melt as it rests.
- Don’t forget to set the table with a steak knife for everyone!
Ingredients Needed
- Filet mignon: I use 4 filet mignon, also known as beef tenderloin steaks, which all fit nicely into my air fryer basket without overcrowding. Bring them out to room temperature about 30 minutes before you begin.
- Steak seasoning: Montreal steak seasoning is great because it already contains salt and pepper in the blend, so you don’t need much more than that.
- Bacon: You can use either pork bacon or beef bacon, whichever you prefer. The fat renders as it cooks, adding so much extra flavor!
- Cooking spray: I love avocado spray, so it’s what I have on hand. You can use any cooking spray you prefer. Avoid using any lower smoke point oils since we’re using high heat.
- Butter: A pat of butter is added to the tops of the steaks as they rest and melt all over the filet mignon, making them even juicier.
- Fresh herbs: Thyme or chives are a great way to garnish the meat before serving.
How to Cook Filet Mignon in Air Fryer
Step 1: Preheat the air fryer to 450° F. Some recipes don’t require a preheat, but this one does. It’s the best way to get a nice crust on the outside.
Step 2: Pat the steaks dry with a paper towel and then season all sides with the Montreal steak spice.
Step 3: Wrap a strip of bacon around the edge of the beef and secure it with a toothpick. You can also wrap it around the entire steak; it’s up to you.
Step 4: Place the bacon-wrapped steaks into the preheated air fryer basket. Spray avocado oil over the top.
Step 5: Cook the steaks for 6 minutes and then flip them over to cook for another 4 minutes. I like mine medium-rare, which is an internal temperature of 135°F.
Step 6: Transfer the steaks to a plate to rest. Add a slice of butter on top and allow it to melt as the steaks are resting.
Step 7: Garnish each one with chopped thyme or chives and sprinkle with black pepper before serving.
How long to cook filet mignon in air fryer?
For medium-rare done steak at 450°F in the air fryer, I cook it for a total of 10 minutes. Below is the guide for what the internal temperatures should be according to how you like yours done. You’ll need to tack on 1-2 minutes of extra cooking time for each level of doneness.
- Rare: 120°F
- Medium-rare: 130°F
- Medium: 140°F
- Medium-well: 150°F
- Well done: 160°F
What to Serve with Air Fryer Filet Mignon?
It’s great with the classic sides like mashed potatoes and roasted asparagus. You could also add a mushroom gravy for your mashed potatoes.
Sometimes we’ll do oven roasted potatoes, scalloped potatoes, or cheesy caramelized onion mashed potatoes instead. If I have leftover bacon, I’ll make bacon wrapped asparagus.
If you like blue cheese or Gorgonzola, a few crumbles of either one on top of the steak would be amazing!
Recipe FAQs
You can really season your steak however you like! I prefer simplicity, so if I’m not using just salt and pepper, my go-to is usually Montreal steak spice.
I love it so much I’ve started making a homemade blend of Montreal steak seasoning to keep on hand. I have another great steak rub you might want to try.
Yes! As the bacon cooks, it shrinks and changes form. You need the toothpicks to hold it in place until it is cooked.
The only reason you wouldn’t need toothpicks is if you’ve wrapped it in a way that the seam is faced down under the beef.
Fresh herbs are always a good idea. Any type of compound butter that melts into the meat is delicious. You could also garnish with sautéed mushrooms or pearl onions.
This is a great idea to get ahead. You can season the steaks, wrap them in the bacon, and put them on a plate covered with plastic wrap. Keep them refrigerated overnight until you’re ready to cook them.
Bring them back up to room temperature before cooking.
